Putting a recipe book together for celiac sufferers is a little daunting, as from personal experience it either does not work for everyone, it does not always work all the time, it can work once a week/month. This can make life even more confusing trying to work out what has gone wrong with your diet.

I have tried to keep them simple and inexpensive, although that is not always easy. I have had some continued success using corn-flour for my baking and thickening and for making bread and pita. The problem can the milling, this can take place using the same process/machinery as wheat milling thereby giving a contaminated product.

Unfortunately the market for Gluten-Free products has gone the same way as the vitamin/mineral supplement industry. An industry it is and worth Billions. Buying bulk can help, and get away from all the fancy printing and packaging. I suggest starting off with some alternative flours such as:

Soya flour
Maize flour
Potato starch flour
Potato flour
