Two ingredient slow cooker shredded chicken

I was originally planning on buying a rotisserie chicken to shred, but I am flexitarian. I am easily grossed out by meat, particularly dark meat and meat on a bone. When I thought of all that dark meat that will be going to waste, I decided to give slow cooker shredded chicken a chance. I used Purdue defrosted chicken and cooked it on low for only three hours. I think this is key to avoiding your chicken getting dried out. My only ingredients were boneless skinless chicken breast and reduced sodium chicken broth, just enough to cover the chicken almost completely in the crockpot. By the time I took it out at three hours, it was already falling apart. It was practically shredding itself for me. I took a quick video just to show you how tender it really was. This is possibly one of the simplest crockpot recipes I have ever tried. In my opinion this tastes just as good if not better than rotisserie chicken.

  

Ingredients:

Boneless skinless chicken

Chicken broth (reduced sodium)

Directions:

Place chicken in slow cooker.

Cover with broth.

Cook on low for 3-4 hours or until chicken is done. *The key is not overcooking the chicken so it doesn’t dry out!
