I was given the opportunity to try out Minute® Rice along with a recipe of my choosing. I chose to compliment a meal with their cheesy rice recipe.  The meal consisted of roast beef, mashed potatoes, corn, cheesy rice with sauerkraut or beef gravy optional. Hearty meal to be sure. The recipe is simple and requires only 3 ingredients! You can add extra veggies, bacon bits or what have you, but I felt it complimented the meal best on its own, given the corn and sauerkraut. I know sauerkraut is a traditional staple of French cuisine, with sausage or on Reuben sandwiches, but I eat it any chance I get on mashed potatoes. I’ve heard of it referred to as a “forgotten vegetable”. If you don’t know what sauerkraut is (you’d be surprised how often I get asked), it is basically pickled cabbage. Some people make it at home as it’s quite simple and requires just a little bit of time. You can also purchase it bagged, canned or in a jar.

Minute® Rice Cheesy Rice Recipe:

  • 2 cups water
  • 2 cups Minute® White Rice, uncooked
  • 8 American process cheese food, singles

  1. Bring water to boil. Stir in rice and cheese slices.
  2. Cook and stir until cheese is melted; cover.
  3. REMOVE from heat. Let stand 5 minutes.
  4. Stir in extras such as broccoli florets, cooked carrots, red peppers, green peppers, peas, bacon bits, etc. (Optional)
